Feel Better Chicken Soup

  • ½ yellow onion, Diced

  • 4 stocks of celery, Diced

  • 2 large carrots, Diced

  • 3 cups of chicken bone broth

  • 2 cups of chicken broth 

  • 2 bay leaves

  • 1 head roasted Garlic

  • 2 tsp Onion powder

  • 2 tsp Garlic powder

  • 2 tsp Fresh ground turmeric

  • 2 tsp Fresh ground ginger

  • 1 tsp Ground black pepper

  • 1 tsp Red pepper flakes

  • 1 tsp dried Thyme

  • 2 tsp Italian seasoning

  • 1 tsp Oregano

  • ¼ tsp Ground ginger

  • 1/2c orzo

  • 3/4c cooked chicken breast, shredded

  • 2 tbsp fresh Basil, sliced

  • 2 tbsp fresh parsley, torn

  • Juice of half a lemon

  • Salt to taste

    Instructions

1. Prep the Vegetables: Dice the onion, celery, and carrots, and set aside.


2. Heat a large soup pot over medium heat. Add a drizzle of avocado oil.


3. Add the diced onion, celery, and carrots. Sauté for 5–7 minutes until softened and fragrant.


4. Pour in the chicken bone broth and chicken broth. Stir to combine.

5. Add the bay leaves, roasted garlic (squeezed from its skin), onion powder, garlic powder, black pepper, red pepper flakes, ground and fresh ginger, thyme, Italian seasoning, oregano, and fresh ground turmeric. Stir well and bring the mixture to a simmer.


6. Stir in the orzo. Let it cook in the simmering broth for about 8–10 minutes, stirring occasionally to prevent sticking.


7. Add the shredded chicken breast, fresh basil, parsley, and lemon juice. Taste the soup and add salt as needed.


8. Reduce the heat to low and simmer for another 5–7 minutes to allow the flavors to meld.


9. Remove the bay leaves before serving. Ladle the soup into bowls and enjoy!


Optional: Garnish with extra fresh herbs or a sprinkle of grated Parmesan cheese.
